Whipped Shortbread Cookies

- 3 cups of softened butter
- 1 1/2 cups of confectioners sugar
- 4 1/2 cups of unbleached flour
- 1 1/2 cups cornstarch
- Candied cherries
In a large bowl beat butter and confectioners sugar until light and fluffy. Slowly add in flour and cornstarch until well blended. With lightly dusted corn starch hands Roll in to 1” balls and place 1” apart on baking sheet. Press down slightly and add cherry halves. Bake at 300ºF for 20 to 22 min or until lightly browned.
