1. Cream eggs, sugar, oil
2. Add zucchini, vanilla then flour.
3. Add remaining dry ingredients mix well and then add the fruit. 4. Grease and flour 2-3 loaf pans

Ingredients

  • 3 eggs
  • 1 cup vegetable oil
  • 3 cups all purpose flour
  • 2 cups brown sugar
  • 2 cups zucchini
  • 1 cup currants
  • 1 cup raisins
  • 1 cup walnuts
  • 2 cups mixed fruit
  • 1tsp vanilla
  • 1tsp cinnamon
  • 2tsp baking soda
  • 2tsp allspice
  • 1tsp salt
  • 1tsp nutmeg
  • 1tsp cloves
